The apps are free. The servers are the subscription.

The Mac and iPhone apps are free and complete on their own: every card, FSRS fitted to you, Anki import, cloze, image occlusion. None of that costs us anything to provide, so none of it is gated. What does cost money is the part with a server behind it, and that is what is sold: syncing a collection between your devices, the web client, and keeping the shared catalog current.

Your cards are yours either way. Export the whole collection whenever you like, subscribed or not, and it opens in Anki.
